Raw Radiance Chocolates

This recipe was a total hit at my Sacred Beauty Elixirs and Superfoods class where I shared about the beautifying and age-defying properties of raw chocolate and the other superfoods in this recipe. Even the non-health conscious folks I have shared these with have gobbled them up.

3/4 cup extra virgin coconut oil or coconut butter, gently melted

½ cup raw almonds, pecans, walnuts or cashews, soaked overnight and drained

4 Tbsp agave nectar

1/4 cup hemp protein or high quality whey* protein

1/2 tsp liquid Stevia (I like Sweetleaf brand)

1 Tbsp organic vanilla

1 tsp cinnamon

¼ tsp ground cloves

¼ tsp ground ginger

1 cup raw cacao (chocolate) powder (you can substitute carob powder) I used a combo

1/3 cup goji berries, dried rose petals or cacao nibs (optional)

2-4 drops Young Living orange essential oil (optional, but yummy)**

Directions: Lightly coat candy molds or an ice cube tray with oil and set aside (or use mini cup cake tins and papers).

Pour coconut oil into a medium bowl and set aside.

Process the soaked nuts in a food processor until finely ground. Set aside.

Slowly whisk spices, Stevia, and agave nectar one at a time into the coconut oil or butter.

Then, whisk in vanilla.

Next slowly stir in cacao (or carob), ground nuts, and hemp or whey protein, one at a time, distributing evenly as you go. Add essential oil if using, and mix well.

Spoon into molds, ice cube tray, or cup cake papers and sprinkle with optional goji berries, rose petals or cacao nibs. Set in freezer for at least 15 minutes.

These are best stored in a tightly sealed container in the freezer (if they last!)

* Good whey protein should come from grass fed cows in New Zealand, be low temperature processed and be sweetened with stevia or lo han. See http://greensfirst.com/4550 for the one I recommend. Note, if you use a stevia sweetened whey, you may want to reduce the stevia in the recipe a little.
