I know it’s been a while since I’ve posted, but I’ll just say there has been a lot going on …
Between the Free Spring Cleanse (you can still join here) …
a new biz (more on that later) …
and enjoying life, I’ve found myself lagging a bit in connecting

share my latest love … non-dairy, Coconut Whipped Cream.

This little healthy indulgence is divine on raw cheesecake, pumpkin pie, fresh berries,
gluten-free waffles (check out my scrumptious recipe here in my e-recipe book) …
or whatever your heart desires. 😉

Dairy-free Coconut Whipped Cream (scrumptious!)
- 1 can coconut cream (I get mine at Trader Joe’s)
- 12 or more drops stevia (I like to use vanilla creme or lemon drop)
- grated zest of one organic lemon or orange
- about 2 pinches grated or ground nutmeg
- 1 teaspoon vanilla if you like
Whip all the ingredients with an electric mixer until combined and creamy and fluffy (about 2-3 min.) Adjust the stevia to suit your taste.
Use right away or store in the fridge for 4-5 days.
